It is a cooling system used with the progressive technology of quality wine production. Its main task is to control the temperature of the must during the fermentation phase. The cooling and recuperation unit enables temperature regulation of the must according to the requirements of the technologist. The ripening tanks are equipped with cooling plates or duplicators through which cooling water flows and temperature probes to measure the temperature of the must. The cooling water is produced by a water cooler. The waste heat (recuperation) generated by the cooling unit can be used to heating or heating the must, which is used to start the fermentation process of the red varieties. During the off-fermentation period, the cooling potential of the device can be used to cool the stored wine and to air-condition storage areas by water convectors.
